I love cornbread.My mom has a great cornbread recipe and I love the stuff. Unfortunately, it's not exactly plentiful this far north. Last time I had good cornbread was at the Chicken and Wings Fest, and that was because we got it from the fine folks at Bad Wolf BBQ, of Kansas City, MO. Them boys know their cornbread.
So I got my mom to send me her cornbread recipe, fired up the oven, and got baking.
That's right, corral the chickens and toss the kids in the storm cellar, Nail is doin' some bakin'!
Ingredients1 cup milk
0.25 cups butter or margarine
1 egg
1.25 cups yellow cornmeal
1 cup flour
0.5 cup sugar
1 tablespoon baking powder
0.5 teaspoon salt
Directions
Melt the butter.
Beat the butter, eggs and milk together in a large bowl.

Stir in (simultaneously, or as near as you can manage) all the other ingredients. Stir until homogeneous.
Pour into baking trays or muffin tins. We used silicone trays, which are fantastic - no stick, easy to clean up, and available in a variety of cheerful colours.
Bake 20-25 minutes at 400 degrees Fergenhergen, until they are golden brown.
Makes 12 medium muffins. I doubled the recipe and made a larger batch.
