A Somewhat Late Valentine's Day Post

There are a lot of things that piss me off. Just one, off the top of my head, is Montreal hockey fans. I'm watching the game and they insist on doing that ole-ole-ole song. Attention Morons: If you want to watch soccer, move to Argentina.

Okay, where was I? Oh yes. Valentine's Day.

Valentine's Day

Spinach Chicken Parmesan, with mushroom risotto and escargots to start.

Escargots - drain and rinse slugs; melt butter in a pan, mix in escargot mix, simmer slugs until tender. Serve with baguette.

Risotto - follow the directions on the box.

Spinach Chicken Parmesan

1/2 cup grated parmesan cheese
1/2 tsp Herbs de Provence seasoning
3 chicken breasts
1/4 cup chopped green onions
2 cloves crushed garlic
1 tbsp butter
1 tbsp flour
1/2 cup milk
10 ounces chopped frozen spinach (or, about half a bag of fresh stuff, and slightly more milk)

In a bowl, combine cheese, seasoning, and pepper to taste. Roll chicken in this mixture and arrange in a baking dish.

In a sauce pan, saute onion and garlic in butter until tender. Stir in flour, add in milk. Simmer and stir until bubbly. Stir in spinach. Add extra milk if required. Spoon mixture over chicken, and then sprinkle with remaining cheese mixture.

Bake uncovered at 350 for 30-35 minutes, or until juice runs clear.

You know what's worse than a hockey game with the ole-ole-ole song?

UFC with the ole-ole-ole song.
